What girl doesn't love chocolate?

Having limits to what I can and cannot eat this past week has me craving everything! I wanted something chocolate and something new... something different. :) I came across this lady's blog while searching other recipes and saw a picture of a Molten Chocolate Lava Cake. After looking at about 6 different recipes for this I decided to try hers out. It was a hit! Plus, it was super super easy!

[I thought I'd show you a picture before... make your mouth water yet??] 

In all the fuss, I forgot to take a picture of the ingredients. Sorry!

Molten Chocolate Lava Cake

Here's what you'll need:

4 cubes [4oz] semi-sweet baking chocolate
1/2 cup butter [1 stick]
1 cup powdered sugar
2 eggs
2 egg yolks
1/2 teaspoon cinnamon
6 tablespoons flour

1. Pre-heat oven to 425 degrees.
2. Grease 4 custard cups really well. You want these cakes to just plop out onto a plate once they're done baking.




3. In a medium bowl, add 1/2 cup butter & 4 cubes semi-sweet chocolate.


Microwave for 1 minute. Stir until the chocolate is melted & incorporated into the butter.

4. Add powdered sugar, stir well.

5. Add 2 eggs & 2 egg yolks, stir until incorporated.

6. Add cinnamon & flour, stir well.


7. Evenly distribute the batter to the 4 cups.
8. Bake for 13-14 minutes, then remove & let stand for about 1 minute.

9. Carefully place the custard cup on a square heat pad, then put a plate upside-down on top of the custard cup, & flip. It should come out easily, if you greased them well. [*Pick the cup up quickly and carefully, it's still hot!*]



10. Top with powdered sugar, whipped cream, vanilla ice cream, or whatever you choose.

*I used cinnamon. You can also try vanilla or almond extract, espresso coffee, instant coffee, or Nutella. It'd be a fun recipe to experiment on :) I'd love to her what you try!! :)

What we didn't expect...

Friday's surgery went well. I didn't say anything stupid, which was all I was concerned about. ;) I left and was still heavy on the drugs they used on me, so I slept most of the day and night away.
Saturday came, I felt great. So I was up talking, then resting, etc. I was on schedule with taking my meds as directed. I didn't miss a beat.
Sunday rolled around and I started to feel the pain a little more. Taylor [graciously] made me rest and not move the entire day. It was rough, and I could feel my body turning against me. I went to bed early, probably 8:30 or 9 that night, and woke up around 3am, with a migraine, hurrying for my medicine. Once I took the nausea and pain med, I was knocked out cold. Taylor kissed me goodbye that next morning [Monday] and I woke up around 10:30. It was awful!
My migraine had worsened and I could barley move. After a few hours passed, and I got sick [the first time], I called Taylor to come home. Taylor finally got home and I got sick again [number 2]. My lips were completely chapped .... I was dehydrated. And the medicine I was taking for both nausea and pain, was not working. [I found out later, that a side effect of the nausea medicine IS in fact, nausea... what?!] Taylor got me to drink a lot of water. How I lasted through the night, I don't know?! By this point, Taylor has asked many of you to pray for me. It was needed! And it was felt!
Tuesday was here, I was hurting bad. [Happy Valentine's Day] My jaw was throbbing and the migraine wouldn't leave. Taylor, being the amazing husband he is, decided to shower me with readings from scripture. Here is what he read me:


Revelation 21: 1-8

1 Then I saw (A)a new heaven and a new earth, for (B)the first heaven and the first earth had passed away, and the sea was no more. 2 And I saw (C)the holy city, (D)new Jerusalem, (E)coming down out of heaven from God, (F)prepared (G)as a bride adorned for her husband. 3 And I heard a loud voice from the throne saying, “Behold, (H)the dwelling place[a] of God is with man. He will (I)dwell with them, and they will be his people,[b] and God himself will be with them as their God.[c] 4 (J)He will wipe away every tear from their eyes, and (K)death shall be no more, (L)neither shall there be mourning, nor crying, nor pain anymore, for the former things have passed away.”

Matthew 6: 25-34

Matthew 8: 1-4

Matthew 9: 18-34
 18 (A)While he was saying these things to them, behold, a ruler came in and (B)knelt before him, saying, “My daughter has just died, but come and lay your hand on her, and she will live.” 19 And Jesus rose and followed him, with his disciples. 20 And behold, a woman (C)who had suffered from a discharge of blood for twelve years came up behind him and touched (D)the fringe of his garment, 21 for she said to herself, “If I only touch his garment, I will be made well.” 22 Jesus turned, and seeing her he said,(E)“Take heart, daughter; your faith has made you well.” (F)And instantly[a] the woman was made well. 23 And when Jesus came to the ruler's house and saw (G)the flute players and the crowd making a commotion, 24 he said, “Go away, for (H)the girl is not dead but (I)sleeping.” And they laughed at him. 25 But (J)when the crowd had been put outside, he went in and (K)took her by the hand, and the girl arose. 26 And the report of this went through all that district.
Jesus Heals Two Blind Men
 27 (L)And as Jesus passed on from there, two blind men followed him, crying aloud, “Have mercy on us, (M)Son of David.” 28 When he entered the house, the blind men came to him, and Jesus said to them, “Do you believe that I am able to do this?” They said to him, “Yes, Lord.” 29 (N)Then he touched their eyes, saying, (O)“According to your faith be it done to you.” 30 And their eyes were opened. And Jesus sternly warned them, (P)“See that no one knows about it.” 31 (Q)But they went away and spread his fame through all that district.
Jesus Heals a Man Unable to Speak
 32 As they were going away, behold, a (R)demon-oppressed man who was mute(S)was brought to him. 33 And when the demon had been cast out, the mute man spoke. And the crowds (T)marveled, saying, “Never was anything like this seen in Israel.” 34 But the Pharisees said, “He casts out demons by the prince of demons.”




Matthew 11: 25-30
 25 (A)At that time Jesus declared, “I thank you, Father, (B)Lord of heaven and earth, that (C)you have hidden these things from the wise and understanding and (D)revealed them to little children; 26 yes, Father, for such was your (E)gracious will.[a] 27 (F)All things have been handed over to me by my Father, and no one knows the Son(G)except the Father, and no one knows the Father except the Son and anyone (H)to whom the Son chooses to reveal him. 28 (I)Come to (J)me, all who labor and are(K)heavy laden, and I will give you rest. 29 Take my yoke upon you, and (L)learn from me, for I am (M)gentle and lowly in heart, and (N)you will find rest for your souls. 30 For(O)my yoke is easy, and my burden is light.”




Isn't that all so wonderful! Jesus is able!! That brought me much comfort and joy! But after he was done reading to me, we decided to call the Dr. and get an appointment with him that afternoon.  We took the first available. I was able to get myself up and ready, which was a wonderful first step to recovery! On the way to the appointment I read through the side effects of both the meds I was taking from surgery, and I had every [I mean double check some of them- every] side effect listed, for both meds. So I explained what all happened to the nurse & Dr. [which he rocks- I highly recommend him]. He looked at my mouth, flushed the bottom right out [OUCH!] and then decided to put a pack in the wound. He said that my wound was very raw and had some exposed bone. :-/ So he put the antibiotic pack in the wound and gave me more medicine. *I am truly thankful to God for the grace he gives us through medicine!*  The antibiotic is a preemptive against dry socket. So, I left encouraged, and by that point my migraine was gone. *Thank you Lord* 

So for now, I am slowly eating my way back to normal and taking meds as prescribed. We certainly didn't see this coming. Although, I should have known because the previous wisdom tooth removal I had went a little something like this too. All this to say, I don't do surgery very well! ;) But, I am on the mend! And I am so thankful for all of you who prayed for me. And so thankful for those who made meals, delivered movies, gave flowers. Everything was so comforting!

In all of this GOD still remained the same, FAITHFUL! And I am blessed with an amazingly selfless husband who didn't stop once this weekend, but kept pushing forward to help me get better! He deserves an award! :)

Our weekend


Friday morning I'm scheduled to get my last 2 wisdom teeth out. Taylor will be staying with me the first half of the day, then I'll take a visit to my old home, the Malaments, to rest the day away while Taylor's at work. [I love the Malaments!!!] Since I'll have a lot of down time, I'll be watching lots of girly movies. :-D On the list already is [of course] Downton Abbey & Annie.


I have been overwhelmed with the blessing of God and his people! So many of you have offered to make us meals, and some of you are. :) *Thank YOU so much!* You have showered me with much love and comfort and *grace*! I pray the Lord blesses each of you richly. And if there is ever an opportunity, I will be there ready to make you a meal! 

A special part of this weekend is that my sweet friend and her husband, Kaitlin & Adam, will be staying with us. You may think I'm crazy, but I never get to see them, so surgery or no surgery, they are always welcome. :) They will be busy the whole weekend, so I'll get to rest a lot, but it is special to know they will stay here with us and not in a hotel down the street. 

I am not worried at all about how this weekend will go. I am in good hands! God is the ultimate physician, he knows what he's doing! And Taylor is an amazing husband and is really good at taking care of me!! *Thank you, Lord*

[Vegetable] Broccoli Cheddar Soup

This soup is one of our favorites. I enjoy doing soups, but find I'm not that good at them. [I know you're probably thinking, how can she mess up soups??] Well, what I've found is that I cannot leave all soups on the stove to simmer all day, some will turn into mush. ;) But, this vegetable/broccoli cheddar soup, I haven't messed up :) and it seems to turn out better each time I make it. [Don't know how that happens, but hey, I'll take it]. I first made this in the dead of Winter; cold weather and soups are the best combination. But now, even when it's fairly warm outside, it's still the perfect soup!

Here's what you'll need:

2 tbs butter
1/2 cup onion, chopped
1 cup carrot, chopped or julienne [small slices]
1-2 celery, chopped
1tbs garlic, minced
4 cups chicken broth
2 potatoes, peeled & chopped
1 tbs flour
1/2 cup warm water
2/3 cup milk
2 cups chopped broccoli [I go heavy on the broccoli & used 2 large broccoli heads, chopped]
2-3 cups of shredded cheddar cheese




1. Chop all your veggies.


2. Melt the butter in a large pot, on medium heat.

3. Add the onions, carrots, & celery. Cook until tender.



4. Add the garlic, cook for 2 minutes.


5. Add the chicken broth & potatoes. Bring to a boil & cook until the potatoes are tender.

6. Mix the flour with the water, then add. Let the soup simmer until thickened.


7. Add the milk & broccoli, cook until broccoli is tender.

8. Stir in the cheese, allow it to melt.

Easy & Low-Fat Coconut Shrimp

I am finally starting to go through my cookbooks to find new and different recipes. This recipe is easy and low-fat and so delicious! It would be fun to twist it a little and try different ingredients, but for now, here is the original recipe. [Thank you Betty Crocker's Cookbook]

You will need:

Apricot Sauce
3/4 cup apricot preserves
1 tbs lime juice
1/2 tsp ground mustard

Coconut Shrimp
1/4 cup all-purpose flour
2 tbs brown sugar
1/4 tsp salt
dash of ground red pepper [cayenne]
1 egg
1 tbs lime juice
1 cup coconut
1 pound uncooked peeled & deveined shrimp [I bought jumbo size]
2 tbs butter, melted

1. Make Apricot Sauce.
      * Mix all ingredients in pan. Cook over low heat, stirring occasionally, until preserves are melted. Refrigerate while making shrimp.

2. Heat oven to 425 degrees. Spray rack in broiler pan. [If you don't have a broiler pan, use a baking sheet and cooling rack on top, spray the cooling rack].

3. Mix flour, brown sugar, salt & red pepper in first bowl. Beat egg & lime juice in second bowl. Place coconut in third bowl.






4. Coat each shrimp with flour, then dip into the egg, then coat with coconut. Place on the rack. After all shrimp are covered, drizzle the melted butter over top.




5. Bake 8 minutes or until shrimp are pink and firm and coating begins to brown. Serve with sauce.

Hawaiian Chicken kabobs

Mmmmm!!!! Everything about this recipe is mouth-watering to me. I love pineapple & chicken & kabobs of any sort, so this makes me one very excited girl!

You will need:

4 pieces of chicken breasts, cubed
1/2 of a pineapple, chopped into chunks
1 green pepper
1 red pepper
1 onion
1 garlic, chopped
3 tbs of soy sauce
3 tbs of olive oil
2 tbs of brown sugar
pinch of ginger
salt & pepper [to taste]

1. Cut the pineapple into chunks. Set aside.


2. Cut the chicken into cubes & place into zip lock baggie. [Raw chicken gives me the creeps in every way possible, so if you're anything like me, this is the moment when you stop everything and disinfect all surrounding areas.] 



3. Now that you have a clean counter again ;) Cut your green pepper, red pepper & onion into chunks & chop the garlic.



4. Add the green pepper, red pepper, onion, & garlic into the baggie with the chicken. Then add the pineapple.
5. Add the soy sauce, olive oil, brown sugar, ginger, salt & pepper.

6. Zip up the baggie and mix ingredients around, making sure to cover everything.

7. Let the vegetables & chicken marinade for at least 2 hours.



8. After the food has marinated, place all the ingredients in a deep dish. Then begin to carefully place the food onto each skewer.



9. Grill 15 to 20 minutes, or until chicken is cooked through.
