Cobb Salad

Salad is one of those meals I could eat every day forever. You can change it up in so many ways and that's what I like. This Cobb salad was so easy and delicious and I don't know why I don't make it more?

While eating Taylor mentioned how much he liked the Cobb salad and then how much he likes salads in general! Lucky me :)

What made this an even easier/stress-free meal was that I prepped most of it in the afternoon, so come dinner time when we are both getting home from work, all that was left was a few things and then it was ready. That is what I would like for all my meals.... to come home and do minimal work. Oh that would be nice! ;)

Cobb Salad

Here's what you need:
Lettuce
3 Eggs, hard boiled & diced
1/2 cup Red onion, chopped
1 ripe Avocado*, chopped
1 Roma tomato, chopped
6 pieces of Bacon, broken into pieces
6 pieces Chicken tenders, cooked & cubed into bite size pieces
1 cup Cheddar cheese, shredded
Ranch dressing

[Prepping for dinner before hand, place everything in their own bowl & cover with plastic wrap.] 

1. Boil eggs, 10-15 minutes. [Add cool water to the pot, covering the eggs. Bring it to a boil. Check the eggs to see if they are cooked all the way by carefully removing 1 at a time from the pot and spinning it on the counter. If it spins slow, it's not done. If it spins fast, they are done] Remove the eggs from the pot and place then in a bowl of iced cold water. Drain the water and put eggs in the fridge, about 10 minutes. Remove shell of egg while running it under cool water. Dice. [If you are prepping the eggs for dinner, dice then cover with plastic wrap and place in fridge - make sure there isn't excess water in the bowl]
2. Chop onions & tomato, set aside in separate bowls.

3. Cook bacon, until crispy. Break into pieces. Set in small bowl.

4. Cook chicken, until juices run clear. Cube into bite size pieces. Place in bowl.

5. Cut Avocado* right before serving to prevent browning.

6. Prepare lettuce [You can prep this before hand, but I chose to do it before serving dinner]

 
7. Add shredded cheese to a bowl.


Serving
1. Place lettuce in your bowl.
2. Add all the toppings that you'd like.
3. Add Ranch dressing [or your choice of dressing].

We got to eat this again as leftovers the next day. Delicious!!!
